Annealing the wheat means giving water to the wheat. For this, annealing is done by using washing and tempering machines (2).

Although the washing process is carried out in stone mills, the main purpose here is to ensure that the wheat is cleaned with water. Because the washing machine alone performs a large part of the cleaning process. In the machine known as the vertical washer dryer, the stones are separated by the weight principle and the light foreign materials are separated, while the dust on the surface of the wheat in the water is cleaned. In the meantime, it is annealed by taking in 3-4% water. In the section where the excess water, known as drying, is thrown away, a part of the shell is peeled off (3).
